All categories

Other vegetables such as tomatoes and onions may be included as well as some additional condiments, but I would like it only mildly spicy. I have done some looking on my own but have not come up with the perfect recipe yet. It is for a wedding shower.

Depp's Lover, I tried your Beef stew recipe and with some very minor modifications of my own, it was a raving success with my husband. Kudos and Bravo!!

Here's one I love, you can sub the chiles and cayenne with Madras curry powder to taste.
Mafe
2 chickens cut up
3/4 cup oil
3 large onions chopped
2 to 3 lbs. chopped tomatoes
4 8-ounce cans tomatoe paste thinned with hot water
4 to 5 cups hot water
1 Tbs salt
8 ounces natural peanut butter
6 carrots cut in 1 inch chunks
1 lb okra, trimmed
1 large cabbage coursely chopped
3 or 4 sweet potatoes peeled and cut into chunks
a mix of chopped fresh chile, dried red chile and 1/4 tsp cayenne, to taste ( replace with madras curry powder if you like)

Brown the chicken in the oil. Remove and add half the onions and cook untill browned. Add all of the tomatoes, chicken and hot water and bring to a boil. Add peanut butter and reduce to a simmer. Simmer for 30 minutes, then add vegies.
When everything is tender add your spice mix and the reserved onions. Feel free to change the vegies if you like but be sure to keep in the onion, sweet potatoe and some kind of leafy veg. A friend of mine uses mustard greens and plantains in his.
Very good served over hot rice.

This has peanuts and not peanut butter but I hope it's close to what you need. Just replace the beef with chicken and adjust the seasonings as necessary

AFRICAN BEEF STEW

STEW:

1/2 c. chopped onion
1 c. tomato juice
1 c. (canned) beef stock
2 lbs. round steak, trim and cut in 1 1/2 inch cubes
2 tbsp. vegetable oil
1 (8 oz.) can tomato sauce
1/2 tsp. curry powder
1 tsp. minced fresh ginger
6 drops Tabasco
1/2 tsp. salt or to taste

Heat oil, add stew meat brown well. Remove from pan, add onion to drippings and stir fry until soft. Return meat, add curry powder, ginger and salt. Stir fry one minute, add the rest of the stew ingredients. Bring to a boil, reduce heat to simmer, cover and cook tender 1 1/2 to 2 hours.

RICE:

1 tbsp. vegetable oil
1 clove garlic, halved
1 c. uncooked rice
1 c. water, hot
1 c. beef stock, hot
Salt to taste

GARNISHES:

1 (8 oz.) can pineapple chunks
1 jar chutney
1 c. peanuts

In heavy pan with a lid, heat 1 tablespoon vegetable oil, add the garlic clove. Cook turning until golden. Do not burn. Remove garlic, discard. Add rice to garlic oil, stir to coat and stirring frequently, cook until golden. Add hot water and stock, add salt. Bring to boil reduce heat to low. Cover and cook about 20 minutes until liquid is absorbed and rice tender. Keep warm until ready to serve. Serve garnishes in small bowls on the side. Serves 4 to 6.
