They are wanting me to bring something thats different yet not to heavy since it is so hot out.
ANy appetizer or salad or andy kinda dip suggestions please!! Thank YOU

How about the velveta cheese melted into canned chili? This is always popular with fritos and nachos.

My recipe is very similar to one already listed except you place it in the oven. Take 2 pks philly cheese, 1/2 bag shredded ham, 1 bottle whipped cream, 1/2 bag of shredded cheese, 1 pk french onion soup mix (add more or less of each ingredient to taste). Blend well, scoop middle out of a cobb loaf (round deep and quite large) place all mixture into hollowed out bread, arrange scooped out bread pieces around the loaf and place in oven on moderate until dip is warm and bread pieces are crispy. It's lovely, and once the dip is gone, the bread roll can be torn up and eaten too. No mess no fuss.

1 brick cream cheese
1 lemon
1 bottle cocktail sauce (I like Heinz)
1 package fake Krab
2 sleeves ritz crackers-whole wheat or regular, doesn't matter

Spread the cream cheese evenly (may want to melt it little for softness) in a shallow serving dish. Top with about 1/2 the bottle of cocktail sauce. Use a spoon to spread out the sauce, like you're putting pizza sauce on a crust. Then sprinkle a package of fake Krab (chopped roughly) as a third layer over the cream cheese and cocktail sauce. Squeeze a few slices of lemon juice over the Krab. Garnish with remaining lemon slices and serve with the Ritz. Excellent!

This is a recipe for a salad, but if you put it in the blender for about 30 seconds, it becomes a marvelous dip.

BBQ eggplant and tomato salad

Ingredients

- 1 medium eggplant
- 2 beefsteak tomato
- Cooking oil
- Red bell pepper
- 2 clove of garlic
- Salt and pepper
- Basil and baby spinach

1. Put little slits on the eggplant skin
2. Oil the eggplant and put it in the bbq till soft (takes about 30 minutes for a medium sized eggplant)
3. Oil and BBQ the tomatoes for about 8 minutes
4. Skin the eggplant and mash it (using forks, so it is a little chunkie)
5. Mash the tomatoes with skin
6. Mix it with the eggplant
7. Add olive oil, red bell pepper (fresh), salt, pepper and chopped garlic.
8. Decorate with basil and baby spinach

Fruit Dip:
1 jar marshmellow fluff
1 container of cool whip ( i like to use the french vanilla)
1 block of cream cheese (u can use a flavored kind)

use the entire block of cream cheese. mix in a big spoonfull of fluff and then some cool ship. keep adding the last two until you reach a sweetness and consistency that you like. serve with a variety of sliced fruit. this is really great because you can make it as sweet as you like. i prefer mine not to be sickly sweet.

fiesta dip:
in a large baking pan layer the following
refried beans
shredded cheese
ground beef w/ taco seasoning (make according to taco mix directions)
shredded cheese

bake until hot and bubbly

take out and add layers of:
sour cream
cheese
salsa
shredded lettuce and
diced tomatoes

serve warm with tostitos! i love this with the hint of lime ones but then again, this is kind of warm and heavy....

Spinach Dip in bread bowl:
20 oz sour cream
1/2 bag shredded cheese of your choice
1/2 bag of fresh spinach - chopped
Knott's spinach or vegetable soup mix
1 whole round bread loaf (pumperknickle is my favorite).

Mix the cream, spinach, shredded chz and soup mix in a large bowl and refrigerate while you are preparing bread bowl.
Cut the top of bread loaf off and scoop out in dip size chunks the inside of bread to make it an empty bowl. Fill this with your dip mix. Cover and refrigerate. Put the bread pieces in a plastic container until ready to use.
This is great with raw veggies of choice for dipping.

Lemon-Garlic Chick Pea Dip with Veggies and Chips Recipe courtesy Rachael Ray

1 (15-ounce) can chick peas, drained
1 clove garlic, cracked from skin
1 lemon, zested and juiced
4 to 5 sprigs fresh thyme leaves, stripped from stems
Coarse salt and pepper
A few drops hot sauce, to taste
1/4 cup extra-virgin olive oil eyeball it
4 ribs celery from the heart cut into dipping sticks, 4 inches long
1/2 seedless cucumber, cut into sticks
1 red bell pepper, trimmed and cut into sticks
1/2 pint grape tomatoes
1 sack reduced fat gourmet chips (recommended: Terra brand Garlic and Onion Yukon Gold flavor potato chips (50 percent less fat than regular chips))

Combine the chick peas, garlic, lemon zest and juice, thyme, salt and pepper and hot sauce in food processor. Turn processor on and stream in the extra-virgin olive oil. Transfer the dip t a dish and surround with veggies and chips. That'll keep the munching going on until dinner!

artichoke dip...

2 cans of artichoke quarters..Chop further...mix with 1c-1.5 cups mayo ( i use reduced fat and no one can tell) 1 cup or more parmesean cheez (save some for spinkling the top) 3 -4 garlic cloves minced, sesame seeds toasted about 3-4 Tablespoons...
Mix it all in a bowl...spead out thinly into large baking dish (glass) slice tomatoes very thinly (i use cherry tomatoes and cut in half) lay all over the top...sprinkle with remaining cheese and some additional sesame seeds...Warm in 400 degree oven until brown and bubbly on sides....serve with chips or baquette

Good warmed up and then brought down to room temperature....( cook first though because you want the tomatoes to "roast" into the dip!! yummo)
some spinach would be good added as well...

I have two dip recipes I love. One is for a crab dip. Mix on package of cream cheese with one can crab meat (well drained), 2 tsp paprika, salt, black pepper, and cayenne pepper to taste. Bake at 350 for about 10 minutes, or until soft. Server with your choice of crackers.

The second is for an Mediterranean olive spread that is really good. You need on can black olives finely chopped. Half can of petite diced tomatoes (you may want to chop them smaller). Two to three tsp minced garlic (depending on taste). About 1 tsp salt and 2TBLs olive oil, 2TBL Parmesan cheese. Combine all ingredients. Serve over slices of toasted baguette.

CDsloan22 gave almost the same recipe I was going to suggest. We make the same thing all the time, except we add 1 tbl of buffalo hot sauce and mix it up for a "buffalo" chicken dip. Yummy!!!!

This is a dip for cut up fruit and great for summer-

1 jar Marshmellow Fluff
1 pckg strawberry cream cheese.(fat free if you like)

Mix them together in bowl and chill 1 hour before serving.

My kids also like to dip celery in this.
