Chicken bruichetta is very easy and doesn't require having pasta with it (you could make a small serving on the side for yourself). Preheat oven to 350...lightly grease a shallow baking dish...season 2 chicken breasts with salt, pepper, garlic powder, and oregano and put to side...dice one large tomato, one small onion, and fresh basil...mix together with 1 tblsp of olive oil and 1/3 cup fresh grated parmesan cheese, put to side....bake chicken breasts for approx 45 mins or until nearly done....top breasts with the tomato mixture and bake for an additional 10 to 15 mins. Serve with italian veggies or over rice.

Chicken Parmesan minus the pasta.. You can even do it on Hoagie rolls like sandwiches.Hot meatball sandwiches, baccala- cod fish....(like smelt)...Any salad... Italian cookies...they're my favorite.. Eat cookies!!!Soup- (Italian wedding soup).. Lots of seafood...Veal parmesan.. That's a tough one.. Italians almost always use PASTA. They like lamb too.Good Luck. I say go with the cookies!Anisette are the best ever...

A lot of Italian cooking has nothing to do with pasta.Try looking up polenta dishes or risotto.
