Plain boiled rice and stir fried veggies are an option but if you are looking to reduce your carb intake this may not be such a good choice- they are certainly healthy foods though.
Prawns are extremely low in fat as long as they are not hong kong style and coated in a thick batter.
Look for anything containing green leafy vegetables such as pak choi and broccoli they are very nutricious. If you are going for fried noodles go for the thicker chow mein style ones rather than fine rice noodles or singapore style. The finer the noodle, the greater surface area there is for fat and oils to coat.
You may want to also try squid or scallops as an alternative to meat which in a chinese takeaway can be rather fatty and filled with additives and colourants. Tofu is often available but not everybody likes it and it is often deep fried.
Soups can be a good option for a more healthy side dish or starter. Hot and sour soup is particularly nice, I always order it when I have a cold and it seems to make me feel better.
Good takeaways will often make you a main dish of your own choosing if you ask them to, so shop around.

I grew up eating chinese food (Yeah, am chinese :-) ). When I came to the UK, I went thru a few chinese take-away around England. From what I've experienced, it all depends on which chinese take-away. Overall, the only thing I can think of that's healthy is the boiled rice.
Vegetables, soup & chicken is probably the nearest "healthy food" next to the rice. However, you must asked them to not put in MSG, careful on the oil, starch and salt. Chinese food here are positively laden with these 4 things!

Ask for a stir fry of chicken & vegetables with a side order of beansprouts. If my local Chinese takeaway is anything to go by it will be delicious.
Any Chinese - takeaway OR restaurant - will tell you that their menu is only a sample of what they can do, as their ingredients are all fresh and ready to make whatever combination you want.

Takeout can get real fattening and artery clogging so, here are some tips to order Chinese food so that it is healthier for you.
Order the Sweet & Sour Pork/Chicken or any other meat dish without the fried breading. Without the breading, you get the taste minus the extra calories and fat.
Eliminate the soy sauce or ask for low sodium sauce. Order Fried Rice without soy sauce. In dishes that are cooked with soy sauce, ask if they can cook with low sodium soy sauce. Cutting out or minimizing the soy sauce will help cut down your sodium intake since Chinese food is known for being high in sodium in general.
Ask for brown rice instead of white rice. More and more Chinese restaurants are offering brown rice as an alternative. Fried Rice made with brown rice is pretty yummy too.
Order Rice or Chow Mein/Chow Fun but not both. When eat you both rice and Chow Mein/Fun in one sitting you are carb over loading and will end up feeling really heavy. Instead order another vegetable or meat dish. Better to have more protein or veggies.
Order Wonton soup instead of the Wonton appetizer. Yes they are really crunchy and yummy, but fried Wontons are loaded with fat and calories, and so is the sweet & sour sauce you dip them in. With Wonton soup, you can eat the Wontons minus all the fried fat calories, and get that nice warm cozy soup feeling.

There are no unhealthy dishes from a 100% edable menu. There are only healthy and unhealthy diets. You need to eat a bit of everything, even food classed as "unhealthy" for a balanced diet. You can't live off one thing no matter how "healthy" it is, too many bannanas in one sitting will kill you through a potassium overdose. Well, you'd probably throw up 1st but you get the idea.

You'll have to order plain rice and some steamed vegetables Order sauce, if you must, on the side (and use very little of it). If they offer brown rice, choose that instead of white.
This is absolutely fine, health-wise and is a convenient option if you are tired or in a hurry. Problem is, It's not very much fun, so not many people actually do it. They get tempted by something else on those extremely extensive menus, and it ruins it if you add an eggroll or something.

When I used to do Weight Watchers you were allowed to have chicken & pineapple and plain boiled rice from the Chinese as part of the permitted menu, so I expect it is pretty low in saturated fat.
It tastes "okay"... lol

If eaten in moderation you can have what you like. I enjoy chinese food and have take-away about once a fortnight. I eat exactly what I want cause during the day I make sure I have less calories than I would normally.

chinese food is actually quite healthy. try any of the cantonese fish dishes. or ofcourse vegetable dishes. try to avoid sechuan, it has a lot of batter and oil usually.
