I am going to echo an earlier answerer's reply that it is a town in the southern United States.
The way people name their children really gives no clue as to whether or not it is male or female. For instance, I know both guys and girls named "Leslie." All of the girls named "Leslie" are tall and beautiful, and I think most of them are certified public accountants now.
If somebody can be named Minnesota Fats, you would assume that the person is a male. However, I know people that named a daughter Dakota.
My answer is ask the online professor. Absent asking, use "dear sir or madam"

If you do not need to use Mr, Ms, Mrs or Miss, don't.
Just use Prof or nothing.
