Would a market like Ralphs be able to slice ribeye really thin to make a philly cheesesteak sandwich, or would I need to look for a butcher?

When I make these sandwiches I used already sliced frozen Philly Steak Meat. Its in your grocer's freezer section; its a thin red box. It is super easy, just take it out of the box and toss it on a hot skillet for a couple of minutes. Its really, really good I promise.

Initially I would say Ribeye is the beat cu to use, but in all honesty....any cut of beef will do. Chuck, flank, bottom round would really make no difference if you concerned about the toughness of the meat. Slicing meat thin enough to do cheese steak meat will take care of that. For flavor purposes, if you season well, if would be impossible for most people to be able to distinquish what cut of meat is what. Suggest you try a flank, or bottom round, sliced very thin, grill/saute with garlic, salt and pepper and see what I mean... You are tasting the melding of all the spices, cheese, and meat together... going top shelf on meat is not important in this.

yes, just go to whichever store you like and ask the butcher. if you don't see a butcher, there's usually a bell you can ring. pick out the meat you want and ask the butcher to slice it super thin. make sure to tell him that it's for a cheesesteak sandwich, he'll know just what to do. there should be no extra charge either.

it's always good to know your local butcher. they can be very helpful in many ways, from which type or cut is best for what you're making to slicing, trimming, etc.

We love those sandwiches too!....I read if you take a boneless ribeye and put it in the freezer until it starts to freeze....it will be easier to slice....you can then cut it yourself....as thin as you wish. Make sure you knife is very sharp so you don't get some extra meat in your sandwich! LOL More people are cut with dull knives than sharp ones......since they slip easily. I noticed some recipes call for cheddar cheese but I like provolone best. What do you prefer? Good luck now I want one!

These are good answers but also-you can buy the meat, put it in the freezer for about half an hour and then it's easy to slice thin with a sharp knife.

Any butcher could slice for you or if you are looking for a easier alternative, buy Steak-ums. Pre sliced and cook very quickly, I use these all the time for Philly Cheese steaks! Don't forget the Cheeze Whiz!
