why some suspension fork on mountain bike have '80mm-130mm' ? does that means that you can adjust the length of suspension?

Yes... some suspension fork allow thru a dial to change the length of the fork. If you see those numbers it means that you can dial your fork on 80mm for climbs and then to 130 (or less) for downhills. And you don't need to take the fork appart to do it.

Some brands (like Fox) has like 3 settings (100, 120, 140), some have any setting in between (from 100 to 130), or whatever.

The problem of a soft fork is set-up related. Get an owners manual or go to a bike shop to have it set correctly. Too many people never do any suspension adjustments. Adjust your fork for your weight and riding conditions before you spend money on a new fork! Also changing to a shorter travel fork will cause you steering to quicken, longer than what the factory put on it will slow down the steering.

It depends on the fork. You may be able to adjust the suspension by an external knob or lever, or you may have to take the fork apart to adjust the internal spacers.

Yes. Usually it is 85 - 115mm these days. You need to take the fork apart to change the setting though.
