I'm looking for suggestions of "fancy" and/or "smelly" cheeses. But nothing way too out there or used to smear on things. Just something tasty I can cut hunks of and eat, but nothing too traditional and bland either.

Well, brie and camembert are two of my favorites, but they are definitely "smear" cheeses. Havarti is good, so is gruyere. Gouda is my absolute favorite of all time, especially smoked. Nothing wrong with a little cheddar, especially extra sharp. Something I tried for the first time about a year ago was greek kasmeri-hope I spelled it right. Good luck to you.

well, neither fancy nor smelly, but i love havarti. it comes in flavors (red pepper, dill, etc.). you can cut it in chunks. it is soft, but not like brie, and very creamy tasting. i like the plain and dill the best.

you could also go with gouda, muenster, jarlsburg, stilton, feta....................
