Yes, you can freeze cheese...
I do it all the time, you just need to make sure it is sealed good.
It will stay good for up to 6 months.

Yes Blue Cheese will freeze and be reusable but make sure that you seal it well so that it does not get freezer burn, also if you are using it for cheese platters I would not freeze it as the presentation will be affected by the ice crystals that will form inside the cheese. This will not affect the flavor but the appearance will suffer. But as someone else mentioned it will still be good for cooking with or as an additive to salads or such.

Well, instead of throw it away, just freeze it and see what it do after it thawed.
I had a friend years ago and he buy milk that was marked down for a quick sell. He froze it in the plastic jug and said it was good when it was thawed. He never lied, so, I feel he told the truth about the milk.

Yes, it does not change the flavor much but it changes the texture alot, especially with brie. You may not want to defrost and have a little, but if you bake it and puree to make dipps you will never know the difference!

no it won't be as good. but can i suggest something else? get one of those seal a meal gadgets. i use that with my cheeses. it seals well sucks the air out and the cheese will last for months and months. i just keep it in the dairy drawer in my fridge. use a larger bag when sealing so when you reopen it you can reseal again and again
