how would I make pasta sauce in a crockpot using fresh tomatoes?

Easy. As many tomatoes as you want, remove skin by dipping in boiling water for 30 seconds and into ice water for a minute or two, skin will be splitting and easy to remove. Core and seed the tomatoes and quarter. Put in crock pot along with peeled and diced garlic, dried or fresh oregano, dried or fresh basil, just a bit of sugar, olive oil (maybe two teaspoons for every cup of tomatoes), chopped onion, salt and pepper. Cook for about 8 hours on low or 4 hours on high. Process through a food processor or blender until smooth.

Put the tomatoes in boiling water and remove to cool after the skins are loosened. After the skins are removed,chop up the tomatoes and add onoins,garlic and Italian spices.Put in the crock pot but don't put on the lid. This will cook down into a nice thick sauce. After the sauce thickens you can add mushrooms too if you like them.It will take a long time to cook but be patient,it's worth the wait!

Deseed the tomatoes (they can make the sauce have a bitter taste), and either mash, lightly puree, or simply slice them. Add a few tablespoons of olive oil, a small can of tomato paste, some sliced white onion, and tbsps of garlic powder, oregano, basil and a few pinches of salt and pepper. Cook on high until the sauce is the desired consistency.

For more "authentic" red sauces, sautee fresh garlic (4-6 cloves) in olive oil and add. Also add some brunoised carrots and celery to the party.
