I like to make tacos with refried beans, spanish rice, and fried ice cream or sopapillas for dessert. You could also do a black bean and cojita cheese side instead of the refried beans. I also usually serve chips and salsa as an appetizer, or even that pale white cheese? Thats really good too....
Spanish rice isnt hard, I throw the water, a can of enchilada sauce, onions, black olives, and some of the taco meat in with the boiling water, add rice and cover. Viola done in 5 minutes.
Sopapillas are easy too, and very good! Heat some canola or vegetable oil on your stove in a large saucepan. Make sure its pretty hot! Add a flour tortilla, and let it fry for about 30 seconds on one side. Turn it over, if your tortilla puffs up, poke it with a fork so that the steam can escape. Fry for another 30 seconds and lay on paper towels to drain. Finish with a scoop of vanilla ice cream, drizzle honey over the top, and sprinkle with cinnamon.

Simple Mexican Rice
INGREDIENTS
2 tablespoons vegetable oil
1 onion, chopped
1 teaspoon minced garlic
1 teaspoon chili powder
1 tablespoon ground cumin
1 cup uncooked short-grain white rice
1 3/4 cups chicken broth
1/4 cup tomato paste
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Heat the oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until onion is translucent. Stir in the chili powder and cumin, and cook for about 30 seconds. Add the rice, chicken broth and tomato paste, and bring to a boil. Transfer to a 1 quart casserole dish, and cover with aluminum foil or a lid.
Bake for 35 to 40 minutes, or until liquid has been absorbed and rice is tender. Let rest for 3 to 5 minutes before serving.

INGREDIENTS
1 cup fat-free refried beans
1 (4 ounce) can chopped green chilies, divided
1/4 cup chopped onion
1/4 teaspoon salt
1 1/2 pounds lean ground beef
1 cup shredded reduced-fat Cheddar cheese
8 (6 inch) flour tortillas, warmed
1 cup chopped lettuce
1 medium tomato, chopped
1/2 cup salsa
DIRECTIONS
In a bowl, combine the beans, 2 tablespoons green chilies, onion and salt. Crumble the beef over mixture and mix well. Shape into eight 5-in. patties. Top each patty with 2 tablespoons cheddar cheese; fold in half and press edges to seal, forming a half moon.
If grilling the burgers, coat grill rack with nonstick cooking spray before starting the grill. Grill burgers, uncovered, over medium heat or broil 4 in. from the heat for 7-9 minutes on each side or until meat is no longer pink and a meat thermometer reads 160 degrees F. Serve on tortillas with lettuce, tomato, salsa and remaining chilies.
I make mine with out beans.

Beans and rice - or make nachos to go with it. Fry up some hamburger, buy a jar of cheese dip, add the meat, stir and put with chips and sour cream.

corn would be a good vegetable to go with it. beans and rice are always a good standby. guacamole dip would be good too.
