When a person dies and the body corrupts, the remains seems to be dirt. A primitive person, witnessing this phenomenon, might logically think that, if this is what a body becomes, this is what a body is made up of. So, that primitive person tells a story about God making a human being out of dirt and blowing into that dirt-creature the breath of life.
The Bible is not a science book. It would take many centuries for anyone to know and understand what is the real composition of the human body.

Punch, listen, not trying to sound condescending or anything like that. It's just that, you ever believe in God or you don't.
You believe that he is, and that he created the entire universe, the Earth and all life on it from nothing.
Or, you don't believe he is.
But, if you do, then all of creation is a miracle. Life itself is a miracle.
God making the first made from the dust of the ground is a miracle, the direct work of God.
The first man, that God made directly was made FROM dust.
It doesn't mean his body was composed of dust when God was finished.
God formed man from dust to flesh, he did not remain composed of dust, he was just made from dust.
God could have made man anyway he wanted to. He choose to use dust from the ground symbolically. To show us the body of man is not the true man, but his soul is who he really is. The body is just the physical, and is not important. The heart (the soul) of a man is what's important to God.
