Big question. Depends a lot on how it's prepared too.
For saltwater, for my money it's hard to beat Yellowfin Tuna-- but ONLY if it's done right, which means seared on the outside and raw on the inside. Then Rockfish which to me, and to a lot of native Marylanders is very close to crabmeat in taste and texture. Another amazing one is Wahoo, probably as good as Rock, but unless you deep sea fish, you'll never get to taste it. They don't school so you can only catch the random one that swims by while you're fishing Tuna.
Freshwater--can't beat salmon no matter how it's cooked. Trout's a distant second but only if it's used right out of the water.

Saltwater: wahoo's my favorite, but partly because I don't get them that often. Fresh albacore's great, and for inshore fish, halibut is one of those that's good any way you feel like cooking it.
Freshwater: fresh trout. Start the stove, melt the butter, then cast out your line and catch the fish. (Actually, this is probably the best way to eat most fish.)

Saltwater - Ahi Tuna. If cooked properly (i.e. not overcooked), tuna is every bit as good as a quality steak.
Freshwater - Walleye is very good. Easy to clean and fillet, plus has a very mild taste. Walleye reminds me of cod because it is so mild. Versatile too!

Porgy is a great saltwater fish for eating, as this fish thrives mainly on lobster and shrimp for food. As is true with most meat we eat, whatever that animal eats will influence the taste of it. Therefore, Porgy is great as it tastes like lobster and shrimp!!

the only saltwater fish i have ever had was cod, and it was all right. but as for freshwater, try bluegill, crappie, walleye, and even trout, even though its not as good as the other three.

i love blackened red fish. Only if they are imbetween 16-22 inches thou. I have a freezer full of them right now. That size is mostly a brackish fish by the way.

Probably have to be steelhead or salmon, but salmon is more fatty. I like halibut, but I think it's an all saltwater fish.

the best tasting saltwaterfish in tha world is black cod also called alaskan sable fish I would like to know what my friends from alaska think about that as for fresh water I like crappie
