Open the .pdf file in Acrobat. Use the camera thingie to lasso around the desired spot on the .pdf file to pick up a "snapshot". (That will go to the system "clipboard").
Now, go to your favorite graphics software, like, Photoshop or Paintshop Pro or Gimp or whatever... Open up a New Image. Edit and Paste. Your "snapshot" will fly from the clipboard into the new image. "Save as" .jpg.

I am not sure you can do this directly.
You can print it off, scan it in, and save the scan as a jpg but that is rather primitive.
