My exhusband has bipolar and lives nearby but is all over the place mentally; it has now been over nine weeks since he has even asked how our son, 2, is doing; still is typically once every five or six weeks that he'll stop by for less than half an hour anyway despite my many attempts to include him in our son's life..
I have been seeing someone very seriously for almost five months who has embraced my situation and truly loves my son as if he were his own. We have talked about the future and despite having some opposing viewpoints on future children (I want, he doesn't), I would very much like to thank him in a special way on Father's Day without overdoing it.
Any suggestions would be greatly appreciated.

I'd set up a guys day out. You haven't really been dating that long. It may scare him a little. I have step kids & I'm trying to put that perspective on it, not be negative (I promise). Go to the mtns, weekend away, camping, something that guys like but something that you can too. Get up and fix breakfast for them, and maybe let them fish together. I know he's only 2 but little boys like that stuff. When I was a little girl my dad bought me a mickey mouse fishing pole for children (of course). Roast marshmellows, grill hotdogs. Make a leaf collage. I would not buy a father's day card or anything like that. I'd do something very neutral and tell him that this is your way of thanking him for all that he does.
My husband's children live in Kansas and his exwife is rather difficult & he was really down last year so for father's day I took him to Cartersville and we went to Lake Allatoona & his grandmother's house. We went out to eat and did other stuff that we both like. Good luck.

Maybe too soon for that. I'd just cook a nice dinner and dessert without any mention of it being for Father's Day. Men are strange, and since he already said he doesn't want kids, you may freak him out a little. I'd forget the gift idea for now. If you guys are still together next year, that will be different.

Here are some great Father’s Day gift ideas:

1) The Mist 2 Speakers for iPod Nano would be a great gift, he can listen to all his favorite music without headphones!
I have a Nano and sometimes I just want to listen to music at home without putting the headphones in, here's a link to the green set of speakers (also comes in blue):

I don't think that you need to do a gift at this point, but think that a nice day at the park with your son and him would be good. Maybe have a picnic to make it something different than just a dinner out.
