Social order people from their birth, like if you are born to a high caste you are allowed to have special standards and low caste you must have the low cast jobs like plumbing and cleaning what ever your education level. Is it true?

It used to be true, but it is now outlawed. Untouchability was outlawed after India gained independence in 1947.

Social Order - Yes but not based on Birth ... Based on Qualities and Deeds.
Here is the mention from Bhagavad Gita - verse 4.13
Krishna or God Says,

"According to the three modes of material nature and the work associated with them, the four divisions of human society are created by Me. And although I am the creator of this system, you should know that I am yet the nondoer, being unchangeable."

So it is never mentioned based on Birth - but based on Nature and deeds. This was misrepresented by those who where born in family of kings and priests but where not qualified. They did this to unjustly maintain their position and power.
This was very much criticized by the sages of that time and is now abolished...

For any society to work properly 4 Social orders namely - worker class, bussiness class, Administrative and law enforcing class, and Priestly class are needed to work together.
These orders where mentioned such that each person can do his duty properly. Discrimination or treating other human as low was not allowed.

Actually the caste system was an add-on by the blending in of Aryan groups many many years ago, nothing developed solely from a Hindu standpoint, so it's cultural. In theory it's been outlawed, just like bride prices, but some people still stick to it... many Hindus are working hard at eliminating it, but just like any other bad habit, it's likely hard to get rid of.
