people spitting while they talk is their problem,
you can keep them from invading your personal space, & hopefully they are not that strong of a spitter.
(also looking busy with physical tasks will help you dodge the bombardment of saliva, & perhaps get you out of the unhygeinic story)
@worst you just end the conversation really really quick
(or you can just mention they have spittle on their lips/chin, shirt, most figure out something is going on & they check their behaviour)

because when you talk your tongue is moving and when it moves the little pit under your tongue spills out spit which builds up making a person spit
