Canola oil is an excellent choice. Vegetable oil is just a blend of soybean and another oil.

Canola has monosaturated fat, very little saturated fat and no trans fat so that is the only one of its type I use.

Don't use organic peanut, sesame or olive oils which have strong flavor and taste. Peanut oil has the highest flash point for frying (time before it ignites).

Yes you can use canola oil it's the same thing as vegetable oil.

Absolutely, just be aware that a big difference between oils is their smoke point--and because canola oil has a relatively low smoke point unless it's highly refined it doesn't always go well in extremly high-heat applications.

Certainly. Many of the cooking oils - vegetable, canola, corn - are interchangeable. It's a matter of taste. However, you cannot just substitute olive or sesame oil - they have different burning points and distinctive flavors and could alter your dish considerably.

The rule of thumb is to substitute one solid fat for another (ie: butter for shortening), and oil with another oil (vegetable oil for canola oil).
