I make up scavenger hunts for my husband. I'll leave a card for him that directs him to another place (another card or small item of love and more instructions to the next one) and another until he gets the grand prize - you or a final present.
Final presents I've given my husband are:
1) empty boxes stating they are filled with all my love, hopes and dreams and they are his to keep safe.
2) empty box with the following poem on the outside:
This is a very special gift That you can never see The reason it's so special is It's just for you from me. Whenever you are lonely or even feeling blue... You only have to hold this gift And know I think of you. You never can unwrap this gift Please leave the ribbon tied Just hold the box close to your heart It's filled with love inside
Last year, I had to work on my husband's bday. I dropped him off in a popular shopping area with numerous envelopes. The envelopes had times on them for him to open. The first one directed him to the cigar shop where they gave him a card and a cigar (that I'd prepurchased). The next card directed him to a bar where our friend appeared with two beers. He was then directed to several stores that had cards for him. One of the "stores" was a restaurant where he and our friend were seated and given his favorite appetizer and bottle of wine. I gave them an hour there and then our friend took him "walking" and delivered him to the healing arts center for a massage.
I picked him up after the massage and took him to dinner and a carriage ride.
Have fun with whatever you do!

It depends on what your guy likes. Cook him a romantic dinner as a suprise, plan a nice picnic or weekend getaway. Reserve a hotel room and dont leave bed but to answer the door for room service? Or my ultimate favorite - Plan a guys night out for him and let him on his own (they like that).... the best way for him to say wow - is for you to surprisingly let him do what he loves to do - that you may not always be a big fan of. If you're fiance's anything like mine - Dungeons and Dragons is on the list!! :)

Make a love treasure hunt. Cut out lots of big hearts hearts to scatter around, buy little presents or write reasons why you love him and write clues to lead him from one present/reason to the next. At the end of the trail, leave a big present (or yourself!).

Have his favorite meal prepared and candles on the table, when he comes to your house. Wear a revealing teddy.

just telling your fiance this should knock his socks off, and let him tell you what need you could fullfill.
