Milk to make your omelet fluffy; if you are not apposed to meat, the sky is the limit, but you can start slow... ham is usually a good choice, usually a good sliced sandwich ham is good...you can also get thicker slices that you can caramelize in a pan and then slice up to the size you want, you can also use Chicken, Turkey, sausage, beef, bacon, seafood, anything you enjoy eating. Veggies can be any kind! IF you want it simple, stick with things like onions, green onions are a good choice, chives are also a great choice (might be considered more an herb), bell peppers (any color), garlic, depending on the style you are making... you can even put tomatoes, corn, any other kind of pepper, artichokes... the skies the limit!! You can also depending on your choice of how you are making it... cheese is a great thing to use... just really depends on the cheese you want to have, I would stick with easy melting cheeses, but even harder cheeses are good too... they just don't melt as well and easy. To top it off... more cheese, seasoning... perhaps salsa or anything else you think of... there are so many choices... ask yourself "whats your favorite stuff?"

I love omelets myself. I don't make them very often anymore, but when I go to a restaurant, I order omelets with spinach, many different kinds of cheeses (swiss, munster, cheddar), avocado, and even cream cheese is good. You can mix n'match the ingredients for a flavorful omelet! Bon apetit!

Cheese, Coriander and Spring Onion goes really well in an omelets. You can add anything else you fancy.
Spanish tortilla with chorizo (Spanish sausage) is really good too. Add sautéed potatoes,onion and chorizo then add to your eggs. Yum!
Experiment. Omelets are great for leftovers.

Pretty much any vegetable you want! Try different kinds of cheeses as well....pepper jack for a kick! For different meats, try bacon or sausage. Many people top their omelets with salsa and/or sour cream.
Bell peppers, mushrooms, tomatoes, spinach (YUM), bacon, sausage, ham, cheddar cheese, pepper jack, colby, zucchini, jalapenos.....there is so much you can do.

You can put anything in an omelet really - use any leftovers you may have. My ex loved breakfast the day after we had tacos because I would make him an omelet with cheese, taco meat, beans, onions, and then top it with salsa.

Mix it up a little bit. See what you have in your kitchen. Diced up onion is good with just about anything. Also diced tomato, green pepper, other veggies you may have and like... Also, try using different cheeses. I don't know what you usually use, but mix it up for different flavors, from stronger more pungent cheeses to different milds and in between. Just be creative and work with what you have in your kitchen unless you have some specifics in mind.

Fry some bacon, sausage n mushrooms in the pan before you pour your egg on.
Or crack a can of tuna in with the eggs for a really high protein one

I usually find eggs are a good start. Add to that some cheese, onions and mushrooms, and then you've got a nice omlette if I say so myself.

put some green onions, cheese, ham, and little bit of fried potatoes.... then have a bowl of fruit on the side to balance out the salt.

Hashbrowns and cheese! Seriously, that's one of Perkins specials. Along with the veggies. Just fry the hashbrowns first and tuck them in the middle. Mmmmmmm. I miss Perkins.
