Why don't you make a fruit salad. That is my favourite salad.
The only thing that is in the fruit salad is:
2 small cans of tangerines
1 regular size can of sliced pineapples
1 tub of sour cream
4 cups of small (different coloured) mashmellows
As you are draining the cans you can mix up the sour cream with the mashmellows. Once the mashmellows have been well mixed you can add the tangerines & the sliced up pineapples. Once the tanagarines & pineapples are well mixed in. Then you can put it in the fridge.
This is an easy receipe to follow. So enjoy.

Chocolate Éclair Dessert
24 Low-Fat Graham Crackers (About 1 Box)
2 Small Sugar-Free Instant Vanilla Pudding
3 Cups Skim Milk
1 ½ Cups Skim Milk (You may sub whole milk)
12 Ounce Cool Whip Lite (thawed)
1 Small Sugar-Free Instant Chocolate pudding
Place 8 crackers in bottom of 13x9 pan.
Mix vanilla puddings and 3 Cups milk. Mix well and let stand 2 minutes. Gently fold in Cool Whip Lite. Pour half on graham crackers. Top with another 8 crackers. Pour remaining pudding over crackers. Top with last 8 crackers.
Mix the small instant chocolate pudding with 1 ½ cups skim milk. Let stand 2 minutes. Spread over graham crackers.
Let sit 6 hours or overnight in refrigerator to soften crackers. Strawberries may be served on top or as garnish.
Serves 18.

I made this a few weeks ago and tried to use low fat/low sugar ingredients....OMG so good!
Eclair Cake:
Cake:
1 (1-pound) box graham crackers (used low fat)
2 (3 1/4-ounce) boxes instant French vanilla pudding (used FatFree Instant Vanilla)
3 1/2 cups milk (used 1%)
1 (8-ounce) container frozen whipped topping, thawed (used Cool Whip Lite)
Frosting
1 1/2 cups confectioners' sugar
1/2 cup cocoa
3 tablespoons butter, softened (used I can't Believe It's Not Butter-Light)
1/3 cup milk (used 1% milk)
2 teaspoons light corn syrup
2 teaspoons pure vanilla extract
Butter the bottom of a 13 by 9 by 2-inch pan. Line with whole graham crackers. In bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.
For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

Can't Tell They're Low-fat Brownies
serves 24
INGREDIENTS
1/2 cup all-purpose flour
6 tablespoons unsweetened cocoa powder
1 cup white sugar
1/8 teaspoon salt
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
1 (4 ounce) jar pureed prunes baby food (cant tell it is in there)
2 eggs
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.
In a medium bowl, stir together flour, cocoa, sugar, and salt. Pour in oil, vanilla, prunes, and eggs. Mix until everything is well blended. Spread the batter evenly into the prepared pan.
Bake for 30 minutes in the preheated oven, or until top is shiny and a toothpick inserted into the center comes out clean.

Brownie Meringue Pie
INGREDIENTS
3 egg whites
1/2 teaspoon vanilla extract
3/4 cup sugar
3/4 cup crushed chocolate wafers
1/2 cup chopped walnuts
1 cup heavy whipping cream
2 tablespoons confectioners' sugar
DIRECTIONS
In a small bowl, beat egg whites and vanilla on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form. Gently fold in the wafer crumbs and nuts. Spread into a greased 9-in. pie plate.
Bake at 300 degrees F for 30-40 minutes or until the top appears dry and is lightly browned. Cool on a wire rack.
In another mixing bowl, beat the whipping cream and confectioners' sugar until stiff peaks form. Spread over the pie.
Refrigerate for 3-4 hours.

My sister makes an awesome low calorie/low fat chocolate mousse. She makes a package of instant sugar free/fat free chocolate pudding with skim milk and then folds it together with fat free cool whip. Its super good by itself or you can put it in a pre-made graham cracker crust and have pie!

trifles are always good because angel food is low in fat, you could use fat free/sugar free pudding and fresh fruit and they are always a hit at parties because of how beautiful they look. Try angel food cake with fat free white chocolate pudding, raspberries, blackberries and blueberries with either home made angel food or a stop & shop special.
