take ghram crackers and put them on the bottom of a pan & then put chocolate pudding on top.... yum!!

One of my favorites is chicken salad sandwiches. Just get a can of chunked chicken breast, add mayonaisse and mustard, and use the fork to smash the chicken & mix. If you have extra time, you can also toss in tomatoes and onions.
Broccoli/carrots/celery and dip, ramen noodles, anything frozen, etc.
Cans of vegetables are quick and easy, not too high in calories- toss them into a bowl, the in the microwave.
Also, there are these great pre-cooked frozen chicken breasts, 110 calories each, you can get them from Publix. Throw them on a plate and into a microwave, and they are done in 2-3 minutes.
You could pre- make things the night before, especially salad. Another idea is to pre- package things (pretzels, chips, cookies, etc) into ziplock baggies, to make your own 100 calorie pack.

MINI PIZZAS
I like taking an english muffin or whole wheat bun, opened, apply a spoonful of pasta or tomato sauce to each half, add a slice of tomato or ham if you like, and top with a slice of processed low fat cheese (or your fave cheese). Melt in microwave (apr 45 secs) toaster oven, or broiler, just till lightly melted. Makes a nice quick meal or snack. Enjoy!

Caramel Apple Dip
INGREDIENTS
16 individually wrapped caramels, unwrapped
1/4 cup water
1 (8 ounce) package cream cheese
1/2 cup brown sugar
DIRECTIONS
In a medium saucepan over medium-low heat, or in the microwave, melt caramels with water, stirring frequently. Remove from heat. In a medium bowl, cream together cream cheese and sugar. Fold in caramel mixture. Serve immediately.
