i am having a cookout for my wifes family and i need some ideas

Depends on what type of meat you are using. Here are a few for different things

CITRUS CHICKEN MARINADE

1/2 cup orange juice (juice of 1 orange)
1/2 cup lemon juice (juice of 2 lemons)
1/4 tsp rubbed sage or several leaves fresh, chopped
1 1/2 inch section fresh ginger, peeled, minced
1 tablespoon soy sauce
3 cloves garlic, minced
a few drops Tabasco or 1/4 tsp hot salt

Combine ingredients (a blender makes a good emulsion and eliminates the need to mince or chop).
Marinate cut chicken pieces in a Ziploc bag for several hours or overnight. Broil or grill until chicken until done using your preferred cooking method.


STEAK MARINADE

6 cups sugar
5 #10 cans Dole pineapple juice
2 1/2 quarts sherry cooking wine
1/2 gallon soy sauce
1 quart red wine vinegar
3 tablespoons minced garlic

This recipe makes a very large quantity (over 2 gallons).
Mix all ingredients.

Marinade may be kept in refrigerator for up to 2 months. When ready to use, place six New York strips or sirloin steaks (thawed) in a large plastic bag.

Add two cups of marinade. Marinate steaks in refrigerate for 2 hours or up to 2 1/2 days, turning at least once every day.


MARINADE FOR GRILLED PORK CHOPS

2 (10 oz.) bottles soy sauce (lite or reg.)
2 to 4 bottles water
1 tbsp. honey
1 tbsp. orange juice

Use large pan with cover. Use 2 bottles cold water to 1 (10-ounce) bottle of soy sauce. (May use 1 to 1 ratio if stronger, marinade taste desired). Add orange juice and honey, stir thoroughly. Add 10 to 12 pork chops or pork steaks to marinade mixture. Cover completely with marinade for at least 8 hours. Grill over hot fire and serve.

1 cup dry red wine
1 tablespoon Hy's seasoning salt
8 - 12 garlic cloves smashed chopped and smushed
mix all well put into a large seal able plastic bag put in steaks and move them around until all are in the marinade. put into fridge for four days move them around in the bag at least daily.
this is really great if you want the steaks rare to medium.

None .Use prime beef cut 1 1/2 -2" thick add salt & pepper only . On a good piece of beef a marinade is an insult.

This one is terrific and very easy !

1 cup of zesty Italian dressing
2 Tablespoons of a good steak sauce
Whisk together and marinate steak, overnight is best.
Grill and enjoy.

Jack Daniel's no. 7 grilling sauce
it is in the bbq sauce aisle of the grocery store marinate your steaks in the sauce overnight and your steaks will be full of flavor and very tender

1 cup Worcestershire sauce
1/2 cup lemon juice
1 tsp black pepper

The lemon helps tenderize the meat and gives it some zing.
