Here is a great recipe that I've made many times. (my son is also in Iraq), and while I've never shipped these over to him, if I were to send baked goods, I would send these. I suggest making them smaller than the recipe suggests. And cutting down the time. I experiment with a couple of cookies first.
These are perhaps the best cookies I've ever tasted. Not the cheapest to make but the troops are well worth it.
Just Like Doubletree's Chocolate Chip Cookies
1/2 cup rolled oats
2 1/4 cups flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon cinnamon
1 cup butter, softened (No Substitutes!)
3/4 cup packed brown sugar
3/4 cup granulated sugar
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon lemon juice
2 eggs
3 cups semi-sweet chocolate chips
1 1/2 cups chopped macadamia nuts
Preheat oven to 350 degrees.
Grind oats in a food processor or blender until ground fine.
Combine ground oats with flour, baking soda, salt and cinnamon in a medium bowl.
In a separate bowl combine the butter, sugars, vanilla and lemon juice and mix with mixer until combined.
Add the eggs and mix until smooth and creamy.
Stir the dry ingredients into the wet ingredients and blend well.
Add the chocolate chips and macadamia nuts to the dough and mix by hand until ingredients are well mixed.
Spoon rounded 1/4 cups full (yes, 1/4 cups!) onto ungreased, nonstick cookie sheet.
Place scoops of dough 2" apart (you don't need to press dough flat).
Bake 16-18 minutes or until cookies are light brown and soft in the middle.
Let cool.
Store in sealed container to keep soft.
(for best results chill dough overnight).

Homemade cookies are a nice thought, but by the time your stepson gets them in Iraq, they are going to be stale. Stick to things that last longer than a week, like bar cookies, which hold up better than a regular round cookie. Make sure you wrap each cookie individually in plastic wrap due to the bugs over there.

Cowboy Cookies
INGREDIENTS:
2 cups packed brown sugar
2 cups white sugar
2 teaspoons vanilla extract
1/2 cup milk
4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt 2 cups butter
4 eggs
3 cups rolled oats
1 1/2 cups flaked coconut
2 cups semisweet chocolate
chips
3/4 cup ground walnuts
(optional)
DIRECTIONS:
1. Beat together the sugars, butter or margarine and eggs.
2. Stir in vanilla and milk and mix well. Add in the flour, baking powder and salt and mix well.
3. Stir in the oatmeal and coconut. Add in the chocolate chips and nuts (optional) and mix well.
4. Drop by teaspoon on cookie sheets. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes.
This is one of my favorite cookie recipes, and they keep well. My mom used to fill a gallon ice cream bucket with these when we went on family vacation. Great cookies!

No Bake Cookies
2 c sugar
½ c cocoa
½ c milk
¼ c butter
Cook 1:30 minutes after boiling
Add
1 tsp vanilla
2 tsp peanut butter
3 c oatmeal
Drop by spoonfuls on buttered wax paper or cookie sheet.

Peanut Butter Chocolate Chip Cookies
INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup butter or margarine, softened
1/2 cup creamy or chunky peanut butter
1/2 cup SPLENDA® Sugar Blend for Baking
1/2 cup packed SPLENDA® Brown Sugar Blend
1 teaspoon vanilla extract
1 large egg
1 1/3 cups NESTLE® TOLL HOUSE® Peanut Butter & Milk Chocolate Morsels
DIRECTIONS
Preheat oven to 375 F.
Combine flour and baking soda in small bowl. Set aside.
Beat butter, peanut butter, SPLENDA® Sugar Blend for Baking,
SPLENDA® Brown Sugar Blend and vanilla extract in large bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels.
Drop dough by rounded tablespoon onto ungreased baking sheets. Press down slightly with bottom of glass dipped in SPLENDA® Sugar Blend for Baking.
Bake for 8 to 10 minutes or until edges are set but centers are still soft. Cool on baking sheets for 4 minutes. Remove to wire racks to cool completely.
