I like to have bagels for breakfast and sandwiches for lunch. Chips, pre-made pasta salad and fruit are great extras. You can make chili, freeze it in freezer bags (double up on bags) and reheat in a pot later. But my favorite camping meal is steak and baked potatoe. Marinate and freeze your steaks before hand. Prewash and foil your baked potatoes and throw everything on the grill when you are ready to eat. I only like to cook once a day, so I make sure there is plenty of food that does not need to be preheated. Make a menu and then a checklist to make sure you have everything you need. It really sucks when you try to eat a baked potatoe without sour cream. :) Good Luck

Why not do a casserole? Chicken and broccoli. I usually take a 4 chicken breast, cook them with good seasoning, either on the stove, or baked. I wouldn't recommend boiling though, that takes all the flavour out of the chicken. Preheat oven to 375 degrees F (109 degrees C). In a bowl mix cheddar cheese soup, or mushroom soup (whatever you like), sour cream, milk, an egg. Mix in chicken and broccoli. Pour into casserole dish. Sprinkle with bread crumbs and shredded cheese. Bake for 30 minutes. Another is lasagna. My husband always used to think it was expensive to make, however, it cost almost the same as spaghetti. If you buy the sauce it keeps the cost down. Also, I would suggest buying the noodles that you don't have to cook before hand. It makes it a lot easier to layer. Preheat oven to 375 degrees F (190 degrees C). Cook the meat, drain fat and add the sauce. In another bowl I like to add ricotta cheese, one egg, and Parmesan cheese. Then you can start layering. Put meat on the bottom, cover with mozzarella cheese slices, noodles, then spread the ricotta mixture. Keep doing this until you have built up they layers ending with the mozzarella slices. Cover with foil and bake for 25mins. Check on the back of the lasagna noodles. Some vary on times. Remove foil and bake until cheese is nice and bubbly!! Good luck, I'm sure you'll do great!!

Foil Dinners
Chop up carrots, onion, ground beef, and potato (you can also add tomato or crack an egg in it if desired)
Place the amounts of what you want on a sheet of aluminum foil. Kind of bend the ends of the foil up before you do this so the stuff doesn't run all over. Add a little oil, water, salt and pepper.
Bend two sides of the foil upwards and then roll them down together. Then roll up the two other sides so that nothing should spill out.
Then place the foil pack over the BBQ or in a fire pit. The stuff cooks roughly 10 - 15 minutes.

I agree sandwiches are good specially when it is hot. Same with cut fruit and melons. Other things I like are soup or a dutch oven meal. A quick easy one is to much your corn bread mix put in two or more can's of chili and the add the corn bread mix let sit till done.

Go to any of your favorite fast food restaurant's (even Chipotle).
Buy your favorite burritos (breakfast or lunch). remove from wrappers. roll up in the heaviest mil thick Reynolds Wrap. place them in the freezer. before leaving, place in gallon freezer bags (to keep water out once placed in cooler w/ice) They will begin to thaw slowly during your trip. when ready for a meal place on the side of your heat source, monitor 'till at desired temprature. enjoy your prepared meal with no mess and no litter.
