The best thing to do is just modify meals you would usually eat but with vegetarian options. It sound hard but it's not really. For example, you can make a good chili, curry or broth with kidney beans or tofu instead (or even a meat substitute). Bulk everything out with lots of veg and serve with pasta, rice, cous cous, millet, quinoa etc. There are also loads of good websites which you can find by doing a quick search, which other vegetarians and vegans contribute to, so you can just choose whatever you're in the mood for!

I love, love, love, "Vegan with a Vengance " by Isa Moskowitz. It is my absolute go-to friend when it comes to cooking pie crusts or kale (or anything really.) But really the Moosewood cookbook is the standard. It's been around for like, 20 years.

The original Moosewood Cookbook by Mollie Katzen is good. The marinara version of their pasta sauce is loaded with delicious veggies and makes the perfect sauce for her lasagna recipe. There's some less-than-common ingredients but nothing too "out there" so it's good for a new veg.

Check out Deborah Madison's cookbooks, or the Moosewood cookbooks. Both veggie. I get them as gifts for a veg friend.
