It depends on what you get. Some dishes do and some don't.

Dolmas have fiber from the grape leaves. Tabouleh has it from the parsley. Greek salad does, along with that green bean dish. Baba ganoush has eggplant in it. Falafel is fried but it's made from chickpeas, and so is hummus.

The middle eastern restaurants dont usually have the traditional home cooking recipes on the menu...
There are alot of vegetables involved in middle eastern cooking:
Hummus, lentils, almonds, peas,spinach, squash,pistachio nuts, tomatoes are all usually in many of middle eastern cuisine and deserts...and they are high in fiber.
