Well, she has lots of options, but it sounds like she may enjoy a little luxury and a Gm product. I would say the GMC Envoy. She can get 2 or 3 rows of seats the running boards are very close to the ground. And as far as price goes GMC is still considered luxury by many but the price is usually within $300 dollars of the chevy models.
Cadillacs are nice but the suvs can run you around $60,000. You can save about $30,000 going with the GMC, or she could just buy 2 and give you one. LOL good luck

Non-SUVs: Chevy Malibu or Impala, Buick Lacrosse or Lucerne, Cadillac DTS or STS. These are all GM cars we're talking about, so they're basically all variations of the same thing, just some being bigger/faster/more luxurious than the others. The Cadillacs are obviously the best of the lot, but if she doesn't care about badges, then the she'll probably be fine with the Chevy Impala, I see a lot of older people driving them.
SUVs: Cadillac SRX (smaller and more agile than an Escalade), Chevy Tahoe (and whatever the GMC equivalent is).

Get her a toyota Highlander, its a crossover and a lower center of gravity which makes it harder to flip.
As far as Chevy or GMC, chevy have a crossover out i cant remember its name. Its really a delight a very good looking and filled with features. I personally liked the saturn version better called the outlook.
Highlander will have a better resale value and is more dependable. the chevy and saturn on the other hand are really good looking and bigger than the highlander.

Make sure it has lots of safety features, older people are more vulnerable to crashes so make sure it has side airbags and good brakes
