My husband really likes mexican food- either authentic or inspired- other than the obvious nachos, tacos, and bean burritos. I would like a recipe for enchiladas, good refried bean dip, and/or unique recipes for things I may not have thought of, or unique recipes for uncommon burritos or tacos. Thanks for any help.

I have found some great enchilada sauce recipes on Allrecipes.com. This is a good recipe http://allrecipes.com/Recipe/Enchilada-Sauce-2/Detail.aspx that closely resembles the sauce I get on chicken enchiladas at an authentic Mexican restaurant. It is just for the sauce. I would use this sauce on enchiladas made with corn tortillas stuffed with shredded chicken, Monterrey jack cheese, and maybe some onion. First, warm tortillas in fry pan, then dip the tortillas in the sauce, stuff, roll, and place in baking dish. When finished, you can spoon some of the remaining sauce on top and cover with cheese, then bake until hot and bubbly.

This is another great recipe http://allrecipes.com/Recipe/Sweet-Corn-Tomalito/Detail.aspx. It closely resembles the sweet corn cake at Chi Chi's restaurant. I have made it for a few folks, and they all love it. If you read the reviews, some cooks made theirs in the microwave, and I found this to work just fine.

Something else, I love making, and I'm sorry I don't have the recipe on me right now, but I'm sure you could find a good one on the web is Chicken Chilaquiles. They are so yummy. Shredded chicken top of tortilla chips, smothered with a sauce made from tomatillas and chicken broth, or if you can not find tomatillas, you can use canned red tomatoes, and covered in Monterrey jack cheese, then baked to perfection. Topped with chopped cilantro and onions. I love that one. Hope this has given you some great ideas.

I have a couple of really great enchilada recipies. The first is cheese enchiladas... very easy, and really delicious. I serve them with rice and beans. I also sometimes shred chicken and put it into this recipe. Also very good.

Cheese enchiladas:

12 Tortillas
oil for frying
1 15 oz can enchilada sauce (red - as hot as you want)
20 oz of shredded cheddar, or half cheddar, half monterey jack.
6 green onions chopped.

Preheat oven to 350
heat oil in one pan and warm enchilada sauce in another.
Put a little enchilada sauce in the bottom of a baking dish.
Fry each tortilla till it starts to bubble, then put it in the enchilada sauce till it's covered in sauce, then put it in the baking dish. Put 1 1/2 ounce of cheese and some of the green onions in it, and roll it up. When you have all 12 rolled up and lined up next to each other, pour a little enchilada sauce over the top, and sprinkle remaining cheese on top along with any remaining onions. Bake for 20 minutes.

The other recipe, Enchilada Suizas is also really good. It sounds hard, but it really isn't.

12 oz chicken shredded
12 oz monterey jack cheese shredded
1 6 oz can jalapenos
1 8 oz can salsa verde (or more if you like)
about 1 1/2 cup heavy cream
12 corn tortillas
Oil for frying
salt and pepper for tast

Preheat oven to 350
Pour a little cream into the bottom of the baking pan. Fry each tortilla in oil till bubbly, then remove. Mix about half the cheese with the chicken, the jalapenos, the salsa verde, and a little salt and pepper. Roll 1/12 of the mixture into each tortilla and line them up in the pan. Sprinkle the remainder of the cheese over the top and pour the cream evenly over the top. Bake until the top is bubbly and starts to brown, or about 30 minutes.

My husband makes killer green chicken enchiladas and it's so easy.

You need:
Rotiserie chicken from your supermarket
Flour Tortillas
green salsa (find it in the mexican food isle)
Mexican cheese blend (shredded)

how to make:
Shred chicken. Roll it up w/tortilla, put seam side down in 9x13 casserole dish. Pour green salsa & mexican cheese blend over enchiladas and bake until cheese is melted (usually around 325*)

Serve with mexican rice or spanish style rice and black beans or refried beans.

How about Mexican butter?..for popcorn!

..Melt 4 tablespoons of butter over low heat.
..Add 1 and a half dry taco seasoning mix.
..Lightly sprinkle onion salt.
Mix well and should amply cover about 8 cups of popped corn

authentic and he will truly think you are inspired!
..and my mom, who is of Mexican heritage made the best home made flour tortillas that were so good that, plain ole re-fried beans (not canned!)..were great!...throw in a few strips of bacon , along with her home made salsa,hhmmm, great breakfast burrito!..I still put strawberry jam on the tortillas, their not home made tho'...AZ to far from Tn.

I tried this off a friend and i thought it was particularly nice... 3 tablespoons olive oil 1 cup uncooked long grain rice 1 teaspoon garlic salt 1/2 teaspoon cumin 1/4 cup chopped onion 1/2 cup tomato sauce 2 cups vegetable broth 1- Heat oil in a large over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin. 2- Stir in onions and cook until tender. 3- Stir in tomato sauce and broth; bring to a boil. 4- Reduce heat to low, cover and simmer for 20-25 minutes. Don't lift the lid or stir while its cooking. Fluff with fork. Enjoy!!

Taquitos...chicken or beef
chicken enchilada,pollo con mole,chiliquiles,chorizo w/ eggs.
Taquitos..get beef or chicken and boil with onion quaters and whole garlic..shred and roll in corn torillas and fry.

chiliquiles...cut up torillas fry,add tomatoe sauce or enchilade sauce mix and add cheese(monterey or queso fresco) with chopped onions a scoop of sour cream...

Best refried beans...
boil pinto beans with onions,garlic,chopped bacon,salt..cook till beans are soft...add more water if needed..
then in another pan fry up pork or beef chorizo...cook till brown then add beans..smash add salt..if you want extra spicy get a can of jalepenos and get about 2 jalepenos and chop up and ate to beans...You will love these beans..

I'm hispanic- but, I've used simple short cuts to get almost authentic enchilladas...Using boxed easy to find ingredients...

1 pkg. Zatarains cheese rice mix..(but you can use any brand you like)

1 green pepper chopped
1 onion chopped
1 small can corn drained or 1/2 c. fresh
1 bottle Ortega taco sauce- spicy to your families taste or a bottle of salsa
1 pkg. of burrito size tortillas
1 lb. pkg of shredded cheese mexican blend is a good choice...
1 lb. ground meat browned/drained and seasoned with dry pkg. taco seasoning or preseasoned taco meat found in the meat section...(ChiChi's brand)

*Make the rice according to pkg. directions add green pepper/onion/corn and seasoned ground meat

*Warm tortillas between damp paper towels in microwave to make pliable and easier to fill

fill tortillas w/ approx. 1/2 c. of rice mixture...Fold in sides and roll

Arrange in a greased/or sprayed 13x9 inch baking/cassarole dish

Pour sauce or salsa over the top sprinkle with cheese and put into a 350 degree oven till cheese melts and serve with sour cream.....

With the leftover meat/rice mix..I make baked empanadas with Pilsbury Grands bisquits... I stretch the bisquit and fill with 1 tbls. of filling top with cheese, fold over and bake until golden...These also freeze very well and heat well in micro...
