Sandy: arenous-a-um or sabulosus-a-um
Desert: deserta (loca) only plural
or solitudines (only plural )
or vastitas,vastitatis (singular but less common)
if you say "desertus-a-um" it means "abandoned.

then desert in Latin must be translated normally into a plural latin word:

sandy desert => arenosa deserta or arenosa solitudines
