Select large, firm mushrooms, such as Portobello.
Trim and remove caps. If they're tender, chop and saute to use in the stuffing.
In a pan with olive oil, saute 3 tblsp. chopped onion, 1/2 tsp. chopped garlic and 1/2 lb. ground hot or sweet Italian turkey sausage until sausage is done.
Mix with enough Italian style bread crumbs to make it stick together (about 1/2 cup).
Fill each cap with stuffing mixture. Top with a drizzle of olive oil. Place on a sheet of foil on top of a medium grill. Close cover and cook until mushrooms are done, about 10 minutes. The mushrooms will begin to loose their juices when they are ready.Squeeze a little lemon juice on top just before serving. These are also good topped with Asiago cheese.

Remove stems, stuff a layer of loose sausage on the underside of the mushroom. It should stick in place. Place on the grill where it is not *too* hot, mushroom side down, first. Let it cook until tender. Then carefully flip (you may want a wire net so the meat doesn't fall down!) and grill until the meat is brown. And that is it!
The tricky parts are the heat. You may prefer to steam the mushrooms -- put them on a piece of foil, add a little sake or white wine, and then seal inside the foil. Put on the grill for 5 to 10 minutes.

Mushrooms: Mushrooms tend to get somewhat dry if grilled plain, so it’s best to marinate them for a few hours in an oil-based marinade or slather them with an herb or flavored butter during grilling. Thread small mushrooms on skewers so that they lie flat on the grill grate, for easy grilling and turning. Grill over high heat. Cook 3 to 6 minutes per side (6 to 12 minutes in all). When grilling portobellos, cook cap side down first, then invert. Cook portobellos 4 to 6 minutes per side (8 to 12 minutes in all). Grill stuffed mushroom caps, rounded side down, 15 to 20 minutes, using the indirect method. All mushrooms should be generously basted as they cook.
