Do I turn it on high first and then switch to low about an hour later or do I turn it on low first for about 7 hours and turn on to high for the last hour or so?

My crock-pot only has low or high... I hate that, but I think most are like that...

Put it on high for the first hour, so it comes up to temperature faster, and then put it on low. for the remaining time.

crank it on hi.if you are using raw vegs and cut the meat in 1/2 inch cubes.
since you are at home check the vegs every once in a while and if they're done turn it to low.
you can't ruin a stew if there's enough liquid.

turn the burner to medium.

(In between low and high)

just cook it on low, it will be done enough in 8 hrs anyway.
