I would make a nice salad and a half sandwich. I'd include some Sun Chips and something low fat, yet yummy for dessert.

I love to eat these for lunch =)
Veggie Tortilla Wrap
1 (9") flour tortilla
2 thin slices cheese (Monterey Jack or Swiss is good)
1/2 avocado, sliced thinly
1/3 C leftover grilled vegetables (like zucchini, mushrooms, onions, peppers, etc.)
1 large lettuce leaf
2 T balsamic vinaigrette dressing
Serves 1 (multiply by the number you are making)
Place lettuce leaf across the middle of the tortilla. Top with cheese, avocado and grilled vegetables. Sprinkle with dressing. Fold egg-roll style, tucking in sides as you roll.

I like wraps and clubs too. Why not combine them?
I had one at this local deli. It was awesome!
It had the following on it
roasted chicken
avocado
bacon
thin sliced ham
sprouts
lettuce
red onions
tomatoes
ranch dressing
it was wrapped in a spinach wrap.
It was cut in half and served with some Kettle chips and fresh fruit. I had sparkling juice drink with it. And a chocolate chip cookie for desert. YUMMY LUNCH!!!
You could put it in a pretty basket with fun utensils.

I would be more creative than a deli sandwich or wrap, but then again, I love to cook. I love this recipe:
1/2 - cup sour cream
2 - teaspoons blackened, Cajun or Creole seasoning
1 - package coleslaw mix
1/2 - cup shredded Cheddar cheese
1/2 - cup carrots, julienne or shredded carrots
4 - whole wheat, onion or white pita pocket bread
4 - ounces deli smoked ham, thinly sliced
8 - slices tomato
In a medium bowl, add sour cream and seasoning.
Mix and add slaw, cheese and carrots. Mix well.
Cut pita in half; open pockets. Line pockets with ham and tomato. Top with cheese mixture. Serve immediately or wrap and refrigerate up to 8 hours before serving.
Or stuff some tomatoes with chicken salad. Delicious!
These also sound yummy:

I would place a homemade turkey sub sandwich with lettuce, tomato,
and mayo in the bag. I would also place a box juice, and some fruit in
a single sealed container. To finish the box lunch, I would place a
small Hersheys candy bar for desert.

Put mixed greens in a bowl an use other veggies to make a face and use cheeze for hair.
Make sure to put in a small ice pack (cool but not too cold it can freeze your lettuce) so that your lettuce stays crisp and put in extra toppings so they can customize it after admiring it.
