This is an old one.

The three actually pay $9 each. That's $27 of which the bellboy takes $2 and the hotel $25. You subtract the $2 from the $27 NOT add it! There is no 'missing' $.

some anal folks out today, huh?

paid 30 less 5 = 25...of the 5 to be returned the guys each got 1 and bell boy got 2

25 divided by 3guys=$8.33 so the other 1 dollar is the 33.33cents from the 25/3.

good one, try this one out...

Pet Alligator
A guy walks into a bar with a pet alligator by his side. He puts the alligator up on the bar. He turns to the astonished patrons. "I'll make you a deal. I'll open this alligator's mouth and place my genitals inside. Then the gator will close his mouth for one minute. He'll then open his mouth and I'll remove my unit
unscathed. In return for witnessing this spectacle, each of you will buy me a drink." The crowd murmured their approval.
The man stood up on the bar, dropped his trousers, and placed his privates in the alligator's open mouth. The gator closed his mouth as the crowd gasped. After a minute, the man grabbed a beer bottle and rapped the alligator hard on the top of its head. The gator opened his mouth and the man removed his genitals - unscathed as promised. The crowd cheered and the first of his free drinks was delivered.
The man stood up again and made another offer. "I'll pay anyone $100 who's willing to give it a try." A hush fell over the crowd. After a while, a hand went up in the back of the bar. A blond woman timidly spoke up. "I'll try" she said, "but only if you'll promise not to hit me on the head with the beer bottle"

Concentrating on the wrong numbers. There was $5 change. $25 for the room, plus $1back for each guy, plus $2 the bellboy keeps + $30

as noted, you wrote it out wrong, but here is the answer:

The basic idea to its solution is that you should not be adding $27+$2 to get $30 ! The men are in debt, they have paid thirty dollars. Then they get five back, so that they have paid $25. When they tip the bagboy $2, they are then in debt $27, and the bagboy HAS two of those dollars. So, it is $27 - $2 = $25, which it should be. The hotel ends up with $25, the bagboy with $2, each man having paid $9, as they should have.

this has been posted various times and many forms.

The Puzzle is Worded INCORRECTLY.
this means they all payed €9 each

It should read they paid 25 divided by 3 = 8.25
3x8.25 = 24.75 and the bellhop pocketed the rest.
