Baby Doe's would have been a good suggestion, but it has been closed for quite some time now. I wouldn't send anyone to Casa Bonita for a special night out, it is more for the 10 and under age group anyway. Whereever you go, make sure to call ahead and make reservations (also, many restuarants are closed on Mondays). A fun night might be going to the Melting Pot (http://www.fonduecity.com/) which has a location in Olde town Littleton, or Vesta Dipping Grill (http://www.vestagrill.com/) which is downtown. Both are fondue restaurants and it is a fun experience if you've never tried it. Or you might try J's Shabu (303-750-5797 2680 S Havana St, Aurora). Shabu shabu is an asian cooking style which they do right at the table. It is tasty food and a learning experience at the same time.
Buca di Beppo (http://www.bucadibeppo.com) is more casual, but it is a fun Italian family-style restaurant with a cool vibe, and several locations. What I would suggest you do is to call in to The Restaurant show with Warren Byrne and ask him and the listeners for their suggestions. You will certainly get lots of good ideas. The show is on AM 1430, or you can stream it online at studio1430.com ... every Saturday from 9am to 1pm and every Wednesday evening from 5 to 7pm. The studio line is 303-631-1430.

Hard Rock Cafe on the 16th St. mall (Really cool and you're right in the middle of everything downtown! Monday will be slower downtown but should still be fun), Joe's Crab Shack Several area locations.

Cd's wings, i think it's called, on 92nd and Wadsworth.

This philly cheese place, um, 88th and wads on the south east side of the street in a long complex. There is a bus stop and if you look directly behind it facing west, you'll see it.

Santiago's on Ralston and Independence, i think. It is a small shack.

It's been a while since I've lived in Colorado, dammit.

A great pizza place is Fargo's Pizza, it has great food and fun atmosphere. It is located in Colorado Springs.
