Well, for one thing, waht Joseph Smith said was pretty much his opinion, since it's not from scripture. Second, what God said is not nearly as telling as what He did NOT tell us.
He also said "Thou shalt have no other gods before Me." He didn't specify FALSE gods or idols, He simply said no other gods.
Paul said that there were gods many and lords many both in heaven and on earth, but FOR US, there is ONE God, our Heavenly Father, and ONE Lord, Jesus Christ.

The God head is NOT one God existing in three different beings... They are three individual beings with on purpose. When a man and woman are married and become "one" does that mean that they are now able to share two bodies? And when Christ was in the Garden, praying... who was he praying too?... himself? When he cried out, "My God, My God, why hast thou forsaken me." was he questioning himself?
God commanded us to "be ye therefore perfect, even as I, your Father in Heaven is perfect." Well, we know god will not give a commandment to his children that they won't be able to accomplish... so we know that one day, quite obviously in the hereafter, we can become perfect. If we obey this commandment and finally do become perfect, even as God... knowing all he knows... since you would be perfect... what does that make you I wonder?

It is logical to believe what we believe, because we do believe there is only one God, that's God the Father.
Jesus Christ is literally God's Son, as even Jesus Christ mention may times. This shows when Christ show himself to Mary:

Regardless of how many gods there are, our Heavenly Father is the only god we worship, thus he is our God. We worship Him by commandment and because of the atonement of His Son, our brother, Jesus Christ.
