when you sneeze there is a peak of blood pressure that sort of splashes at things with the intensity of the sneeze, so you're getting a blood and pressure push against your optic nerve and the back of your eyes, that causes the retina to dilate for a split second taking in all the colors, even with your eyes shut, there are colors that can be reflected and picked up by this optic nerve. It's like when you stand up really fast and get the fuzzy white spots from being dizzy.
