Because they think they are doing it for God and Allahu Akbar means "God is great" but I read that the more accurate translation is "God is greater."

This is a credal statement much like the Christian Creeds, or the Jewish Shema Yisroel.

Allahu Akbar literally means God (Allah) is great.
Usually this term can be used in every aspect of a Muslim persons life, it is recited in the five daily prayers, and can be recited at any time. this is done purely done in remembrance of the Almighty, and relates the humans to His creator.
It is wrong to suggest or think this term is only used in suicides by ignorant extremists. It does not make you any more religious as it will all be in vain if done for the wrong reasons

Allahu Akbar means "God is Great". These are Muslims who are misguided, suicide is a sin in Islam and so is the killing of innocent people. So, they are not following Islam when they do such things.

Muslims in these words show how proud they are of their faith in the great god more than any thing else in this life.
and sometimes a Muslim say it to ask god the greatest for help after he did all what he can to achieve something,because he trusts that god will help.
