Gotta have a good red velvet cake......A cake designer can do a screen of the charging elephant on a sheet cake...but you can't beat the inside color of the red velvet. If not a sheet cake, then choose his favorite sport for Bama and either make the cake a ball, a field (replicate the stadiums) or even have a small tiered cake with red velvet, of course and classy decorations like buttercreme frosting or creme colored fondant with the crimson ribbons and beads. Lots of ideas here.

A grooms cake really is such a minor thing that few people even notice it anyway. We made ours just like a birthday cake. It was just after the Carolina Hurricanes had won the Stanley Cup so we got a Hurricanes logo on the cake.
It doesn't have to be a big formal thing--after all thats what the regular cake is for.

Have you considered using that crimson color for your bridesmaids gowns?
Another thought is you could do cupcakes in the Crimson Tide colors. Red Velvet cupcakes would be so yummy. Or perhaps have lil Elephants around the cake table.

Nothing will say Crimson Tide like a red velvet cake with cream cheese icing. I would forgo the elephant mascot, and use a capital A on top.

Grooms' cake is the chance to let loose and get something crazy going. I talked with my fiancee and he is onboard with me.
I say make the cake shaped like the big elephant head, it'll be more striking that way. You can have it done in red or white if the thought of gray icing freaks you out. Thanks Steel Magnolias. If you've ever seen that movie thats why I was not do red velvet cake. It looks a little creepy and every body who eats it gets their mouths dyed red. You can surround it with strawberries covered in white chocolate with red A's on them.

I guess to each his own, but I still like the traditional wedding fare. You can actually take pictures, etc to the bakery now and they can put that on the cake...check with your local bakery.
