Easy Ice Cream Sandwiches

PREP TIME 20 Min
COOK TIME 10 Min
READY IN 1 Hr

INGREDIENTS

1 (18.25 ounce) package chocolate cake mix
1/2 cup butter, softened
1 teaspoon vanilla extract
2 eggs
1/2 cup semisweet chocolate chips
1/2 cup butterscotch chips
1/2 gallon vanilla ice cream, softened

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.

In a large bowl, mix together the cake mix, butter, vanilla extract, eggs, chocolate chips, and butterscotch chips. Roll dough into 2-inch balls and place them onto the prepared baking sheets. Bake for 10 minutes in the preheated oven. Do not overbake; the cookies should be set, but still soft. Let cool on the baking sheet for a few minutes before removing to finish cooling on wire racks.

Using an ice cream scoop, mold the softened ice cream into a ball about the size of the cookies. Place scoop of ice cream between two cookies and gently press together. If you like a smooth edge, run the back of a spoon around the edge of the ice cream sandwich. Working quickly, fill all of the cookies, lay out on a baking sheet, and place in the freezer to harden. Serve when the ice cream has frozen solid. Sandwich cookies can be stored in a freezer bag for up to two weeks.

Why not spider cookies!!!!

Stuff:

2 chocolate wafer cookies

mini M&Ms or chocolate chips

Chocolate frosting

Black lace licorice

What to do:

1:Spread the frosting on the flat side of the cookie
2:Cut a piece of licorice into 8 pieces about 2-3 inches long stick the licorice on the frosting on one of the cookies to look like the spiders legs sticking out (4 sticking out on each side)
3: then put the other cookie frosting side down to hold the spiders legs in place!!
4: using the frosting as your glue use the chocolate chips or M&Ms as your eyes enjoy!!!!!!!!

Chocolate Chip Brittle

1 cup Butter
1 cup Sugar
1 ½ tsp Vanilla
1 tsp Salt
2 cups Flour
1 (12 oz) Chocolate Chips, divided
1 cup Chopped Nuts

Preheat oven to 375. Beat butter, sugar, vanilla and salt in a large mixing bowl. Gradually beat in flour. Stir in 1 ½ cup chips and nuts. Press into ungreased 15 x 10” jelly roll pan. Bake for 20-25 minutes or until golden brown and set. Cool slightly warm. Microwave remaining chips in a small, heavy duty plastic bag on HIGH power for 30-45 seconds; knead. Microwave at additional 10-20 seconds intervals, kneading until smooth. Cut tiny corner from bag; squeeze to drizzle over cookie. Allow chocolate to cool and set; break cookies into irregular pieces.

Makes about 50 pieces

Good Luck!

So quick, so simple, so creamy and delicious!

Fat free cottage cheese
Tub of fat free Cool Whip
Fat free orange Jello powder
Can of mandarin oranges
Can of pineapple chunks

In a large bowl, empty cottage cheese container. Gently fold in Cool Whip, then Jello powder. Stir in drained fruit. Voila! Sure to be a hit. Amount of ingredient depends on the size of the crowd, obviously...

My favorite is kind of like a dessert lasagna

Make a large package of pudding (any flavor)
Layer the bottom of a 9x13 baking dish (you can get a disposable foil one so you can leave it without worrying about getting it back) with whole graham crackers.
Pour half the pudding over the graham crackers, top with another layer of whole graham crackers. Repeat.
Frost the top layer of graham crackers with your choice of frosting and refrigerate 6 hours (or overnight).

An easy and fun one to make with your kids are worms in dirt... sounds gross but its not lol.

Take oreos, put them in a plastic bag and have your kids help you mash them up until they look like dirt... mix up a package of chocolate pudding and mix that with the dirt so it is a little easier to eat...then take gummy worms and put a few in a small plastic drink cup with the "dirt"... then take cocunut and some green food coloring and put that in a bag and dye it green then sprinkle a bit on top... there you have worms in dirt!

Make finger jello. Kids love it and it's easy. Just make the jello (and use double the gelatin and flavor) in a shallow, flat pan and chill.

Nothing in this world could be easier or cheaper.
