Are these slang "kinda" "Doncha"

I wouldn't really call them slang, they're just commonly used short cuts. To me, slang is when you give a regular word a different meaning.

Your examples are colloquialisms that are also contractions don'cha know! They are "a written local accent."

"Kinda - kind of" and
"Doncha - don't you"
have (pretty much) standard dictionary interpretations.

Slang is a word or a phrase that has a meaning that is totally different than the standard dictionary meaning of the word.
e.g.;
bread - money
bird - girl/woman
wheels - car
etc.
