I agree with Philip's answer above.

An example of how they differ: 316 stainless will last a long time even on a sea boat exposed to salt water, while 304 is at risk of rusting noticeably faster. But in fresh water, 304 can last a long time.

I'd say 304 handles most things just fine: fresh water, food, dirt, etc. 316 is better when dealing with salt and more chemicals, but you better test if the environment is that harsh.

316 SS is more corrosion resistant is almost all applications, but can experience corrosion with some acids.
304 is not as good in most cases but is a lot less expensive, much easier to machine and less expensive to weld.
For economical reasons, don't use 316 if 304 will work.
