Peanut butter and banana sandwiches cut into tiny squares.
Macaroni and cheese, apple bits, and mixed veggies cut into small pieces.
chicken breast cut into small cubes, mandarin orange slices, green beans chopped small.
The key is to have a serving of protein (meat, eggs, peanut butter) one or two servings of fruit (apples, bananas, pears...) one or two veggies( green beans, peas, carrots) and a serving or two of bread (crackers, pretzels, corn, pancake, loaf bread)
Serve him whole milk with each meal, unless he has an intolerance to it (babies need the milk fat for healthy brain development).

Kids at this age are developing their pinscher grasp so some healthy finger foods would be good. Whole grain pasta or Quinoa pasta, cut up steamed veggies, cheese, cut up soft fruits and of course when he gets more teeth you will have more options. Just make sure the foods are small and not a choking hazzard.
When I am in a hurry this is what I do - my son is two now:
I get bags of frozen veggies like peas and then I take out just enough for him and heat them up. Then I buy these healthy chicken nuggets from "Health is Wealth" and heat up one or two of those. Add some cut up fruit and a glass of whole milk and you have a great meal.
I also like some of the other fast products in the organic section of the grocery, like Annie's organics. Always read labels to make sure they are really as healthy as they seem.
Cereal is a good snack or meal too!

An easy meal which my children 16 and 31 months both love is pasta and mixed vegetables. Find some very small pasta shapes while he is so little and then when they are half cooked add some frozen mixed vegetables. They can eat it with their fingers. To add some protein I use canned chick peas or black beans, but you also add cut up meat. This is such an easy meal to make and healthy as well.

You already got some great suggestions. Introducing kids to fruits & veggies early is a great idea. I want to caution, peanut butter is not recommended for children under 18 months. They do not have the necessary enzymes to properly process peanut butter. They are more susceptible to nut allergies if introduced too early. The same thing with egg whites, tomatoes & shellfish. Wait until they are older.

My son loves:
PB&J (be sure to have children's benedryl in case of allergic reaction to the PB!)
Fruit such as Strawberries, Blueberries, Grapes, Manderin Oranges and Watermelon
Cut up baked Chicken Breast
All cereals
Mac and Cheese
Cut up Hot Dogs
Cheese Squares
Grilled Cheese Sandwich
Cheese Toast (He loves cheese, can you tell!:) )
Beans
Summer Pasta (pasta swirls with italian dressing, tomatoes, extra)
Yogurt Cups
Cereal Bars
The Kroger Brand Chicken and Dumplings (located in the canned food area - they heat up in a minute and he loves them!)
Cut up grape tomatoes

My son loves yogurt and raisins. He also is a fan of turkey and cheese, but will not eat bread. We just cut up the meat.

fresh fruit and veggies are great, plus it helps them learn to like them befor they are convinced that these things are "yucky" add in a sandwich, soup, or meal such as pasta and you got quick and good.

Gerber Graduates makes lil entrees for toddlers. its all healthy stuff and it doesnt take long to fix. its on the baby isle in walmart....lots of meals to choose from too...and healthy snacks!!

He can eat pretty much anything you eat - just cut REALLY small so he can pick it up on his own.
