why would an output of 4-20mA be less subcetable to exitation voltage rather than 0-10VDC output on?

Because the output of a pressure transducer is directly proportional to the excitation voltage (it's just a simple bridge circuit) whereas a constant current generates an output voltage which is proportional --only-- to the resistance(s) in the bridge.
