here's a recipe that my family loves, it's soo good...
Spicy Citrus Chicken
4 chicken breast halves
juice of 2 oranges
juice of 1 lemon
juice of 1 lime
2 tablespoons sherry or white wine vinegar
3 tablespoons honey
dash ginger
dash nutmeg
1/2 teaspoon dried leaf basil, crumbled, or 1 1/2 teaspoons fresh
chopped basil
1/2 teaspoon garlic powder
2 teaspoons cornstarch
1/4 cup flour
1 teaspoon Creole seasoning or seasoned salt
olive oil or cooking spray
sliced green onions
Put chicken breast halves between sheets of plastic wrap and gently flatten to an even thickness. They should be between 1/4 and 1/2-inch thick. Combine orange, lemon, and lime juice, vinegar, honey, spices,
basil, and garlic powder, stir in cornstarch until dissolved then set aside. Spray a large skillet with nonstick cooking spray or coat with olive oil, place the skillet over medium heat. Combine flour with seasonings, coat chicken pieces thoroughly. Saute chicken for 3 minutes on each side. Add juice mixture to the skillet and reduce heat to low. Simmer for 5 minutes, until chicken is tender and cooked through. Sprinkle each serving with sliced green onions.
