In the past I have substitued habenero for the scotch bonnets, but I want to make the dish with the traditional pepper. I am told the scotch has a distinct flavor that is quite different from the habenero.

I'm here to answer on the pigeon peas you can often find them in the Latin section of some of the local supermarkets such as also the Wal-Mart. I don't know if a BJs Whole Sale Club is in your area or even a Sams' but you can check the Latin sections there too. Sometimes you can also find them already canned.

Goya is the biggest named company when it comes to Latin products. But some stores are also starting to offer some other brands too.

If you can't find them in BJs, Sams or some of the other places try a Latin market if any are in your area. Or even a Caribbean type super market (this is where my mom gets some of her corn meal for when we make the special tortillas that are from Panama).
