Many factors can contribute to that:
Depression
Some kind of vitamin deficiency (I have tested low in potassium which is
connected to being tired).
A good way to boost potassium in
your diet is to eat bananas,
potatoes and dried apricots.
You don't need to eat all of those,
pick what you like and eat a little
more than you would normally.
Dieting can contribute to tiredness
Finally, we are very complex organisms and therefore there could be many factors making you feel tired at the same time.

Perhaps it is a vitamin deficiency. Do you take a mulitvitamin? I was experiencing this same issue for a long time. I started taking a B complex once a day and it has drastically improved my energy levels. It might not help your situation, but it can never hurt. B12 in specific is designed to boost energy levels.

Have you looked into the possibility that you have obstructive sleep apnea? I too used to sleep forever, when in fact I wasn't getting REM sleep at all because of apnea, and I was exhausted all the time.
Talk to your doctor about a sleep study.

Have you had your iron levels checked? You might be anemic (or maybe just border-line anemic).
With "eating right" you might want to make sure you're getting good iron-rich foods.
(Anemia will also make it impossible to donate blood - you need a higher iron-count.)
