Make something in one pot as its easier, try paella or jambalaya rice, or pasta with meat balls and tomato sauce. or just serve snacks , or different sandwiches.
There are some good recipes in the link below.

She is turning 50, well what could be more appropriate then a 50's party? Party City has loads of decorations for this kind of party. Serve food that your mom would have gotten at the local drive in restaurant. Hot dogs, hamburgers, fries etc. For the young ones at the party, serve milkshakes ( all kinds of recipes for them are on line), Serve the adults drinks in soda fountain glasses. You can get them at the party store. Get some Rock and Roll Oldies Cd's to play through out the night..Ask everyone to go along with the theme, and dress as they did in the 50's.

I'm turning 50 in July and having a 70's party so why not think about a similar idea for your mom as the music, clothes and even food would remind her of being a teenager. You could get a cd with 70's singles and invite her friends to join in and maybe even dress up in 70's clothes(try thrift stores they are great)and ask your mom's friends about what they ate or even drank...I'm sure it will be great..Have fun!

Invite all of her friends and family. Decorate with white lights, draped material, flowers and make fancy desserts for a dessert bar. Serve different types of tea, hot and cold. She will enjoy anything you do for her!
