Figure on about 2 oz of meat per taco and 2 taco's per person.
Plan for 80 people and then deduct 20% (no shows) so figure on food for 65 people.
Allow for shrinkage once the hamburg is cooked so I would recommend 9 pounds of Hamburg.

the amount of meat for something like tacos is on average 1/4 lb per person....i suggest you make 15 lbs of ground beef ...hard shell tacos will hold less meat that flour tortilla shells...then you have to take into account that you will be having lettuce ,., cheese....tomatoes and other toppings to be added to the shells also ....if you have any leftover meat you can always put it into freezer containers and when you want tacos again take it out and reheat it...will stay fresh for up to 4 months frozen...hope this helps! enjoy the tacos and your party!!!!!

Simple Self Serve Beef or Chicken Tacos

This is the everything store-bought, "Taco Bell" style taco.
Serve 10 adults or 6 teenagers, multiply for your expected guests.

2 pounds (4 cups cooked) ground beef or shredded chicken
Two packages (3 ounces total) taco seasoning (see my homemade recipe for big savings)
14 taco shells, hard or soft
1 pound (4 cups) shredded cheese
1/2 head (6 ounces) iceberg lettuce, shredded
1 pint (15 ounces) of chunky Picante sauce (or 3 tomatoes, chopped and drained)
1 large onion, chopped (use green onions if you prefer)
2 1-pound cans charro or refried beans
2 cups (16 ounces) sour cream
1 6 ounce can chopped black olives
1 cup, approximately, medium taco Sauce

Prepare meat ahead (may be done day ahead and refrigerated). Cook ground beef in large skillet with taco seasoning per package instructions. If using chicken, cook chicken whole. Let cool slightly and shred by hand, removing skin and bones. Return to skillet or crock pot and add taco seasoning per package instructions. You may refrigerate the taco meat until your party.

To reheat meat, add just enough water until you reach the desired consistency. Place meat in crock pot for serving.

Arrange additional items on your buffet table. If your party will last several hours, use a crockpot set on low for the meat and place the bowls holding cold items into trays or bowls of chopped ice.

i found this great page for "party size" foods. here's the tex mex page. there' burritos, beans, rice, etc.

I did a party with walking tacos...( mixed in frito or dorito snack size bags) We had approx 100 people and 20 lbs of ground beef did the trick for us. You can buy in quantities for this at Sams Club. I set out all the toppings in flat ice filled storage containers. This allowed me to spend most of my time with guests and not constantly fussing over the food. Good Luck and have fun. Another thing to keep in mind is that kids usually party hop and dont eat much at any one party.

you need to figure at least 1/2 pound per person. Men eat like 4 tacos loaded up with everything and then come back. I would guess 50 pounds and you still may run out.

12-15 pounds should cover it.

(maybe more if it's not a lean cut)

FYI: unless you have mostly football players or some other mega eaters you won't need 1/2 pound per person.

Depends on the amount of people and how many other topings you have. I would say average 1/4 pound for each person.
