Basicly I am a high school student and i am trying to eat a lot less meat and more vegetables,fruit and anything healthier money isent my biggest problem my biggest problem is everything i think of seem like it has meat i think sandwich and it has meat so can anyone recomend meals and recipes that are simple and healthy with no meat

try this receipt

you must put lemon juice,oil,and salt in water, boil that water

add pasta, to the water until tender cook but not too cook

drain in the corriander, add a little palm oil and mix, put aside for the next receipt

in a big pot, chop vegetables like brocolli,carrots, mushrooms , celery or any of your favourite length wise

wash the vegies and drain out any excess water
put in an empty pot and cover on a heated stove until the vegies are nice and tender

cook until the water is no longer visible, than add vegetable powder stock to the pot, add a little oil and stir fry

add the cooked pasta to the vegetable pot and mix together(al dante) add dry parsley to lighten the artist form

serve with any saurce of your choice or on its own.

Stuffed zucchini- hollow out zuccs and make them into little boats, take the part you scooped out and throw into a bowl with some cooked vege-burger and other fresh veges and mix , fill zuccs , top with cheese (if you still eat cheese) and toss into oven. GREAT! Takes 10 min.

I used to eat burgers at fast food restaurants with no meat and use fries to be my filler( criss-cut or curly fies work best ). This works great for those who are just becoming a vegetarian.

If you are eating to be healthier than I do not recommend eating a vegetarian diet , It would seem to make sense that vegetarians eat healthier, but this is not the case. Turkey & chicken are your best bet. you need your daily nutrients to stay healthy, and unless you are willing to learn about what your body is going to be giving up when you stop eating meats (so you can compensate with proper veges or whatnot) you could verywell make yourself weaker and more tired. Pork has 80% less fat than farm raised pigs back in the 70s.

Vegetable curry: 3 potatoes, chopped 1 cauliflower, chopped 1 1/2 cups green peas 3 tomatoes, chopped 3/4 tsp turmeric 1/2 tsp chili powder 1 1/2 tsp cumin 1 tsp curry 1 cup water Place all ingredients in a crock pot or slow cooker. Cook on low for 5 to 6 hours. Potato skins with blue cheese and spinach, 2 large baking potatoes (about 600 gr) 150 gr fresh spinach 3 garlic cloves 1 tbsp butter 190 gr gräddädelost (Swedish creamy blue cheese) 200 ml crème fraiche light Maldon sea salt Pepper Bake the 2 potatoes in the oven until done. This will take about 1 hour in 200 degrees C. Chop the garlic and fry it butter together with the spinach. Grate the cheese coarsely and combine with crème fraiche and the spinach. Cut the potatoes in half and scoop out the flesh. Make sure that the skins remain intact. Mash the potato flesh and combine with the spinach mixture. Salt and pepper the mixture. Fill the skins and bake them in the upper part of the oven at 250 degrees C for about 10 minutes. Serve with a salad.

If you have an oriental food store near by you can make vegtable yakisoba. Just grill your favorite veggies in a skillet and add in the noodles and sauce. If you are looking for a quick microwavable meal try the Amy's brands. I know they sell it at most Walmarts around here. They are the best. You can try boiling carrots for 30 minutes and then covering them with honey (or agave nectar) and tarragon leaves. You can make chili using fake ground beef (such as good times, boca, or morningstar farms all found at Walmart.) You just try a veggie burger or chicken pattie. Just don't eat the boca burgers they are disgusting. Anything else by boca is great (I like their fake ribs) just not the burgers. I also love the Asian supreme salads they sell at the grocery store.

sandwiwches: CHeese, Hummus (roasted red pepper is YUM). tomatoes, lettuce, veggie bacon :) VEggie meat slices. Tofu sliced and seasonoed with soy sauce and poltry seasoning and "fried" in a non stick skillet. All those things make great sandwich ingredients.

Spaghetti. There are plenty of meat-free varieties of Prego and Ragu

Rice and curries (Curries are often made with potatoes and vegetables, and served over rice.)

Vegetable stir fry.

CHeese Lasagna

Cheese Pizza (or pizza with veggies)

Burritoes with beans (veggie ground beef optional)

Vegetable fajitas

Cheese quesadillas

oops... sorry.. for health.. don't overdo it on the cheese. Moderation is key. uhm.. let's see.. healthier...

Learn to love stir frys and curries. THey're pretty healthy.
Learn to love tofu.. there's a million ways to fix it.

Salads. Get creative with fake bacon bits, crutons, garbanzos, kidney beans, pasta, to dress up your normal garden ingredients such as lettuce, tomato, cuke, celery, carrot shreds, etc..

It's not a meal but my favorite thing during the transition was tofurky jerky. Jerky for some reason was the hardest for me to give up. Everything else was easy. Now I found something even better then tofurky, it's called dried beancurd. I know it sounds disgusting but it's great. You can find it at international food stores in the asian isle. Most of them seem to be Korean I think.

- For sandwich's you can fill your bread with cheese or avocado (or smoked fish) with vegetables (such as alfalfa, tomato, carrot, sprouts, cucumber, roasted peppers/tomato's/mushrooms, lettuce, radish and so on).
- For dinner or lunch either salad, or pasta with different roasted vegetables (adding paprika powder, and herbs such as Rosemarie, mint, oregano, thyme....).
- Make a batch of vegetables in the oven: potatoes, tomato's, onion. garlic (still in peal), peppers, roots (celery, parsley), sweet potato etc. rub with olive oil, salt, pepper, herbs.... 20 minutes in the oven on grill... and turn every few minutes.
- Fry some mushrooms in the pan with onion, garlic, tomato's etc..... with some cooked rice (don't forget the herbs).
- Cut red cabbage and put in pot with water, Cinnamon, clove, pepper. after boils add tsp honey and a apple. cook till soft around 20 minutes.
There are endless possibilities....
Make sure to eat every day from all the colors of the rainbow.
Have a nice meal....

couscous is good.Try the olive oil and garlic flavor and add some sauted mushrooms and a side of steamed asparagus, only takes 5-10 minutes to cook and is easy to reheat.

I just LOVE vegetarian sushi rolls (no, sushi doesn't have to have fish in it!). Just cook up some sushi rice and when it's cooled mix in sushi seasoning. My favourite vegetarian filling is grated carrot, cucumber, avocado and spring onion. It is really tasty and healthy.

Steamed veggies are good, whatever you like, put it in a steamer. Add a couple of bay leaves to the water... they give a wonderful flavor to whatever you're steaming.
